blog idle for a long time. Insha Allah , the lockdown brought me back here to
share my experiments with you , I have a lot to share with you .
My routine for cooking
for this ramdan is spending in kitchen for 2 hours before the Magrib , within
that time I used to prepare everything for breaking the fasting. In this
Ramdan, I have experimented some dishes which we can prepare within short
cooking time.
Arabic Murthabak is one
of the easy dish which we can prepare very easily , My version of murthabak is
slightly different from the original version , but tastes absolutely the same
as the authentic Arabian version of murthabak.
Ingredients
Tortilla - 3- 4 (One
each for one murthabak, according to how many you want to make)
Oil - 1/2 cup
For the filling
Eggs -2
Onions - 2 (Chopped)
Coriander leaves -
chopped ( as per your taste)
Garlic - 3 cloves
(finely chopped)
Green Chilly - 4 (finely
chopped)
Pepper powder - 1/2 tspn
Minced Chicken - 2
Breast piece.
Salt - 1/4 tspn ( as per
your taste)
For Minced
Chicken
Chilly powder - 1 tspn
Turmeric powder - 1/2
tspn
Pepper powder - 1/2 tspn
Ginger Garlic paste -
1/2 tspn
Preparation
1. Marinate chicken with
above ingredients for 1 hour and then shallow fry it and keep the minced
chicken ready to use for the filling.
2. Take a bowl and beat the eggs first and then add all the ingredients mentioned for the filling.
3. Once all the ingredients are mixed , add the minced chicken into it.
4. Now the filling is ready .
5. Beat another egg , with a pinch of salt and pepper for an outer covering for our dish.
6. Take one piece of tortilla in a plate , add two spoons of the mixture which we prepared earlier, add one teaspoon of oil , then fold two sides of the tortilla to the centre line,then fold the other two sides to the centre , Now you will get a square shape.
7. Take a non stick pan , switch on in low flame.

4. Now the filling is ready .
5. Beat another egg , with a pinch of salt and pepper for an outer covering for our dish.
6. Take one piece of tortilla in a plate , add two spoons of the mixture which we prepared earlier, add one teaspoon of oil , then fold two sides of the tortilla to the centre line,then fold the other two sides to the centre , Now you will get a square shape.
7. Take a non stick pan , switch on in low flame.
8. Add 1 teaspoon of oil
to the pan , then dip the murthabak in the beaten egg and place it in the pan.
9. Cook two sides for
around 6-8 minutes so that the filling will get cooked well. Also don't forget
to pour little oil on both sides while flipping the sides.
The sweets made of carrot as ingredient is always tasty. Carrot pudding is such a delicious dessert item that we can serve for any parties.I got this recipe from my sister, Nishad Shabeer and I tried it and turned out well. Lets try out the recipe. [Courtesy: Nishad Shabeer]
Ingredients
1.Carrot - 4 Nos2.Milk- 3 cups
3. Sugar- 1 cup
4. Custard Powder- 4 tablespoon
5. Milkmaid
6. Cashews
7. Raisins
8. Ghee- 2 teaspn
Method
1. Add little ghee in a pan and cook the grated carrots.Add the raisins into it.2.Then add half of the sugar and milk in to the grated carrot.Cook it for some time.
3.Mix the custard powder and remaining milk in a bowl. And pour it into the pan containing carrot mixture.
4. Add the remaining sugar and milkmaid into the mixture and boil it until it gets thick.
5.Keep it away from flame and pour it into a setting tray and garnish it with cashews ,pista etc. And cool it .
This is a sweet dish that can be served as dessert after lunch or dinner. I tried this dish for the first time on an ifthar. This is very tasty and easy to cook.Now lets c how to prepare this snack.
INGREDIENTS
1. Besan(Kadala parippu) - 1 cup
2. Milk - 1/2 cup
3. Eggs- 3
4.Milk Powder - 2 teaspoon
5. Food colour - golden yellow - a small pinch
6. Sugar -3/4 cup
7. Powdered Cardamom - As required for flavor.
1.Wash the besan ,put it in a pressure cooker along with 2 cups of water and cook it for 4 whistles in pressure cooker.
2. Now Mix the remaining ingredients in a bowl. First beat the eggs and sugar till it is fluffy. Add milk , milk powder, cardamom,food colour and mix it well.
3. Drain the remaining water in the cooker and grind the cooked besan into a fine paste.
4. Add the besan paste into the bowl and mix it well.
5. Heat a non stick pan and add 1 teaspoon of ghee . Pour the mixture and keep the flame high for 2 minutes. Then lower the flame and cook it for 10- 12 minutes.Cool it in refrigerator and serve it as a dessert.
Meat Spring Roll
Meat Spring Roll is a spicy snacks, we can either use Chicken, Meat or Vegetable Masala with carrot, cabbage etc. Those who likes to have spicy tea snacks will love dis snacks to eat with a little tomato sauce.
Now lets see the preparation of meat spring roll..
Ingredients
1. Minced meat- 1 bowl
2. Onion - 2
3. Carrot- 1
4.Green Chilli- 3
5. Ginger garlic Paste - 1 tspn
6.turmeric Powder - 1/2 tspn
7. Garam Masala - 1 tspn
8. Pepper Powder - 1/2 tspn
9.Salt - as required
10. Corriander leaves - as required
11.Curry Leaves- as required.
12. Coconut Oil - 3 tbspn
13.Egg-1
14.Bread Powder / Rusk Powder- as required.
Method
1. Preparation of meat masala is same as that we prepared for chatti pathiri.
2. Then cook pancakes( this is already mentioned in the chatti pathiri recipe.)
3. Add a little meat masala inside the pancake and roll it as shown in the picture.
4. After rolling all the pancakes with masala , Beat the egg in a bowl and dip the roll in the beaten egg
and roll it over the bread powder and keep it aside.
5. Now heat oil in a pan and fry the rolls.
Dates Cake...
A tasty cake with dates and cashews...thanks to my aunty (Muthumma) for sharing this recipe with me. This is one of my favourite cake which i tried many times and served as a evening snacks.. Jus try out this recipe within 20 minutes and feel the delicious taste....
Ingredients
Butter - 100 gm
Maida- 11/2 cup
Sugar - 1 cup
Egg - 2
Dates - 1 cup [ cut it into small pieces and soak it in little hot water and keep it for one hour.]
Milk - 2 tbspn
Vanila Essence - 1 tspn
Baking Powder - 3/4 tspn
Cashew nuts - as required for taste.
Method
1.Beat butter, egg and sugar together in a mixing bowl.
2.Seive maida and baking powder together and Keep it aside.
3.Add essence ,maida, milk ,dates etc into the mixing bowl and beat it again.
4.Add Cashews into this mixture.
5.Preheat the oven to 180C and Keep the pan for 20 minutes. You can also prepare this cake in a non stick pan by greasing the pan with a little butter and then pour the mixture and close the pan with a lid and keep it under low flame for 10-15 minutes. The cake is ready...
Banana Cake/ Kaypola....
This is my first cooking experiment at my hubby's home for an evening snacks....and everyone liked it.....
very easy to cook and need only few ingredients and everyone love to taste this snack.. especially kids...
Ingredients
1. Banana - 1/2 kg
2. Eggs- 3 Nos
3. Cardamom- 4
4. Sugar- 5 tbspn
5. Ghee - 6 tbspn ( as required)
6. Cashew and Raisins - as required.
Method
1.Heat ghee in a pan and add chopped bananas( cut into small pieces).
2.When it turned into golden brown colour , add cashews and raisins and fry it for a minute and keep it aside.
3. Beat eggs in a bowl and add sugar and little cardomom powder.
4. Mix the fried bananas and beaten egs in the bowl and add remaining cardmom.
5. Heat ghee in a pan and pour the mixture so that the mixture cover the whole vessel.
Decorate the top with cashews. Cover the pan with a lid and keep it for 5-10 minutes in
low flame and then keep it aside.
Chatti Pathiri....
Ingredients
For Meat Filling
1. Minced meat- 1 bowl
2. Onion - 3
3.Green Chilli- 5
4. Ginger garlic Paste - 1 tspn
5.turmeric Powder - 1/2 tspn
6. Garam Masala - 1 tspn
7. Pepper Powder - 1/2 tspn
8.Salt - as required
9. Corriander leaves - as required
10. Coconut Oil - 3 tbspn
Method
1.Heat Oil in a pan and add chopped onion , green chilli and ginger garlic paste . Saute Well until the colour changes golden yellow .
2. Now add the powders from 5-8 and mix well . Add minced meat ( boil the meat by adding salt ,turmeric powder and little chilli powder .After that grind little) . cook it well and add corriander leaves and Keep Aside.
Now we can make the chappathis for layering .
For pancakes
1.Maida - 2 cups
2.Salt - as required
3.Water as required
4. Egg -1
Method
1. Add maida into the beaten egg placed in a mixing bowl and add enough water to make a batter.
2. Heat a non stick pan and add little batter into it to make thin dosa/ pancakes.just cook on one side . No need to flip and transfer them to a plate . Make around 5 pancakes out of this batter.
Steps for Layering
Ingredients
1. Eggs -2
2. Salt - as required
Method
1. Heat 11/2 tspn of ghee in a cooker. Dip a pancake into the beaten egg mixture and place it inside the cooker . Place little meat fillings above it and again place a pancake dipped in egg mixture. Pour little egg mixture above each pancake . Repeat the steps for all the cooked pancakes. pour the remaining egg mixture above the layers and close the lid and cook it for 8- 10 minutes.

Now a days I 'm bit lazy to scribble something on my blog.. Thank u so
much to all my frndz n relatives who encouraged me to continue my
cooking experiments and liked my posts soon posted it on my FB wall.
I
really love to have snacks in the evening , especially when i come back
home aftr my work. Now a days, Shawarma is one of the best selling
snack.Wherever we go , we can see lot of shawarma corners everywhere. So
i can easily come to the point that this is becoz of the demand for
this snack .. ryt.. I really like dis snack very much and i try to get
one when i come to home.. Its very easy
to prepare this dish @ home. Letz try out my homemade shawarma recipe
and plz put ur comments to make dis dish more tasty..
Servings - 10 qnty
Kubboos
Ingredients
Milk- 1/2 cup
Yeast - 1 tspn
Sugar- 1 tspn
Salt- a pinch
Maida- 3 cups
Method
1. Mix milk, yeast and sugar and keep it for 15 -30 minutes.
2. Mix maida and milk mixture and make a dough, make small balls in lemon size and
Keep it for 1hr.
3. Roll it like chappathi and cook it without using oil.
Marinating Chicken
Ingredients
Chicken - 500gm
Pepper powder- 2 tspn
Turmeric powder-1 tspn
Ginger/Garlic Paste - 1 tspn
Curd - 1 tbspn
Lime juice - 1 tspn
Salt - little
Method
Clean and wash the chicken. Marinate it with all the ingredients as mentioned
above and keep it for 3- 4hrs.
Fillings & Rolling Shawarma
Ingredients
Cucumber - 300 gms
Cabbage - 250 gms
Carrots - 2
Tomato (medium ) - 2-3
Mayonnaise Sauce - as required.
Oil - 4- 5 tbspn
Method
1. Cut all the vegetables and keep it in a bowl.
2. Heat oil in a pan and fry the marinated chicken until it is golden yellow in color.
3. Now cut the fried chicken into very small peices and mix it with enough vegetables
and add little mayonnaise Sauce with dis mix. If you like the spicy taste, then add little
white pepper powder and tomato ketchup and mix well.
4. Now apply little mayonnaise sauce in the kubbos and place the filling inside it and roll it in
a butter paper.
Letz try out my new experiment . It came out well in my
first attempt itself...
Ingredients
Butter - 125 gm
Maida- 2 cup
Sugar - 1 cup
Vanila Essence - 1 tspn
Egg - 2
Baking Powder - 3/4 tspn
Milk - 4 tbspn
Cocoa Powder - 2 tbspn
Method
1.Beat butter, egg and sugar together in a mixing bowl.
2.Seive maida and baking powder together and Keep it aside.
3.Add essence ,maida etc into the mixing bowl and beat it again.
4. Mix milk and cocoa powder in another boxl. Divide the cake mix into
two equal parts and mix one part with cocoa powder mix.
5.First pour the plain cake mixture into the greased cake pan and then pour the
cocoa cake mix into the center of the pan.
6.Now use a fork , move it in a spiral shape so that the cocoa mix penetrates
through the cake mix and we get a perfect texture of marble cake , after it is baked .
7. Preheat the oven to 180C and Keep the pan for 30 minutes.
HOME MADE CHOCOLATESSSS..!!!!!!!!!
Nobody says no to the chocolatesss... becoz evrybdy luv to get it and eat it ... I'm also very much crazy about the chocolates.... Even nw if some chocolates comes to our home , me and my sissy starts fighting to get the tasty chocolates...
Now I am happy that my first attempt to make chocolates turned out gud... And I think I can make the most expensive chocolates which we get in market @ my home.. It was a wonderful experience for me to prepare homemade chocolates ... I am really happy to share the piczz which i tuk while making these chocolatezzzz...
Tomato Soup
Letz try this tomato soup recipe cooked in microwave oven. Its very easy to cook and takes only 10-12 minutes of preparation time.
Servings- 2 bowl
Method
1. Add 300gm chopped tomatoes in a mcrowave bowl and add little water around 1cup.
2. Cook it in auto cook mode in micorwave oven and allow to stand it for 10 minutes.
3.Then take it out from oven and blend it in a mixer and pour it again into the bowl.
4. Add salt ,sugar (1tspn ) and 1/2 tspn white pepper , grated ginger and 1 tspn vinegar .Add around 200ml of water into the mix.
5. Again keep it in oven in high mode for 3 minutes.
6. Add 1 tspn of cornflour diluted in little water into the mixture.
7. Keep it gain in oven in medium high for another 3minutes. Now the soup is ready .. You can garnish it with cream while serving...
Chemmeen Puttu....
Everybody likes to have dishes with prawns..We usually prepare Samoosa , spring roll, meen pathiri, biriyani, kakkarotti etc using prawns in it.. Even if we substitute anyother fishes instead of prawns , it wont taste well.. thats the magic of prawns flavour.. So Letz try a new recipe with prawns.. This is very tasty and easy to make..
Ingredients
1. Rice Powder - 2cups
2. Prawns - 1/2 cup (After it is cleaned)
3. Grinded Cocunut - 1 cup
4. Onion -3 Large ,Chopped
5. Green Chilly- 6 , chopped
6. Perumjeerakam powder- 1/2 tspn
7. Turmeric Powder- 1/4 tspn
8. Garlic Paste - 1 tspn
9. Curry Leaves - as required
10.Mustard - As required ( I added 1/2 tspn)
11.Coconut Oil - 1 tbsn
12.Salt - as required
Method
1. Mix rice powder with salt and add water little by little to make a dough.
2.Take a Large bowl and mix 2- 8 ingredients and Keep it Aside.
3. Now Heat oil in a pan , and splutter mustard seeds and add curry leaves and saute it.
4.Then add the prawns mixture. and saute it well . Then add 1/2 cup of water and cook it until it turns into a dry masala.Keep it aside.
5. Now make balls with the dough and fill it with the prawns masala and roll the balls on the grinded coconut so that the coconut sticks into outer area .Then steam it for 10 minutes.
Malabar Prawns Biriyani...
Malabar Prawns biriyani is one of my favourite among the malabar dishes. I love to have this biriyani with cocunut chutney(using coconut ,corriander leaves,lemon juice,etc) , cucumber salad and dates pulingary and some pickle Wow.. its so tasty ....
I tried this dish many times earlier and sometimes it turned out really superb , But I never noted the exact recipe . Last thursday , I tried this malabar prawns biriyani by myself and it was so yummy , and this time I noticed the recipe too, so that I can share it with u all...
Ingredients
For Ghee Rice
Rice (Neriyari - Jeerakashala/Kaima ) - 1 kg
Water - 10cups ( 2cup water for 1cup rice)
Salt -as required
Ghee - 7tbspn
Sliced Onion - 1 Large
cashews - 1 handful
Kismis- as required
Cardamom-4
Cloves -6
lime juice - 1/2 tbspn
Garam Masala - to sprinkle in layers
For the Masala

Onion -500gm (8 medium)
Garlic - 3tbs (made into Paste) / 30cloves
Ginger(3'' piece) Paste - 2tbs
Green Chilli (small) - 13
Tomatoes- 2 medium
Pepper powder - 1tspn
Garam Masala - 1tspn
Lime juice - 1tbs
Curd -2tbs
White kaskas - 1tspn
Coconut - 2tbspn
Salt - as required
turmeric powder - 1/4tspn
coconut oil-8tbspn
Now Lets see how to make the prawns masala......
1. Clean and wash the prawns and put it in a vessel to boil it with turmeric powder (1/4 tspn),little water (only 2tspn is enough) and salt as required.When it gets boiled and the water contents goes , add little coconut oil(1tbspn) and keep it aside.
2. Grind the green chillies, garlic ,ginger into a paste. Add the turmeric powder while grinding the mixture.
3. Heat a non stick sauce pan and add the oil .When hot , add the chopped onions along with salt and cook it until the raw smell goes . Then add the grinded mixture and again saute it for 5-8 minutes .
4. Then add the prawns ans saute it again .Then add the chopped tomatoes. Cook until the tomatoes becomes soft .
5. Grind the coconut , white kaskas and curd together into a fine paste. You can omit this step if the ingrediants are not available.But this adds more taste to your masala.
6. Now add the above mixture and mix it well with the masala .Then add lime juice,pepper powder, garam masala .
7. Now you can smell the aroma of our yummy prawns masala. Add the mint leaves , chopped coriander\

2.Boil the water in a vessel.
3. Heat oil in a large pan .When it gets hot , add sliced onion , when its colour changes to golden colour , add the cashews and kismis and take it from the oil and keep it aside.
4. Add the spices like cardamom, cloves etc and saute it for sometime , then add the rice into this oil and saute it for 5 minutes then add the boiled water , salt,lime juice etc and boil it until rice gets cooked .Mix little rose water with yellow food colour and add it into the cooked rice . Then Keep it aside.
5. Now we can layer the rice and masala alternatively,garnish the top layer with fried onions ,cashews , and corriander leaves and Heat a bottom thick pan , and keep the rice pan on it and place some weight above the covering of the large pan and keep it for 5 minutes. Deliciuos dum malabar prawns biriyani is ready....
Black Forest Cake
Here is the recipe i adapted to make this delicious cake....
Ingredients
All purpose flour (Maida) - 1cup
Powdered Sugar - 1 cup
Eggs - 3
Baking Powder - 1tspn
Dark Cocoa Powder - 2 tbspn
Vanilla Essence - 1tspn
How to make....
1. Sieve Maida ,Cocoa powder, baking powder together and keep it aside.
2. Beat the eggs till it gets fluffy and light.
3. Add powdered sugar into the beated eggs and beat it again.
4. Add Vanilla Essence and then add the sieved mixture of maida,cocoa powder and baking powder.
5. Beat it gently and pour it into a greased cake pan.
6. Preheat the oven to 180 C and then keep the pan for 30 minutes in 180C.
Now the cake is Ready.....
U can simply garnish the toppings with cream , cherries , cashews and chocolates sprinkles .
For making Cream on the top...
Whipping Cream -2cups
Powdered Sugar - 2 tbspn
Saltless butter - 1 tbspn
Vanilla Essence - 1/2 tspn
Beat this and make the cream.
If you want to make a little more thick cream . You can try this
Saltless Butter -75gm
Powdered Sugar/Icing Sugar - 125 gm
Vanilla Essence- 1/4 tspn
Method is same as above...
Carrot Halwa
Ingredients
Carrots - 1/2 kg
Milk - 500ml
Sugar -5 tbsn
MilkMaid- 2 tbsn
Cardamom- as required for flavour
lemon juice - little (3- 4 drops)
Ghee- 1tbsn
How to make
Take a non-stick pan. Boil the milk in it. When it gets boiled , add grated carrots into the pan . Stir it along with milk and boil again. When it starts thickening , add little ghee(1tablespoon) and sugar.
Add 2-3 drops of lemon juice so that milk gets mixed up with carrot. As the mixture start thickened, add little cardamom for taste. Now set it in a tray and decorate the top with nuts and cashews...
This is a very good evening snacks ,we love to have.... Chilli gobi fry..... It tastes good if having with sliced onion and lemon juice added in it.. I used to buy gobi fry when i go for exhibition food stalls.
Now letzz c how to make dis snack.....
Ingredients
Cauliflower - 1 [Seperate the florets and wash it thoroughly & keep it in water containing 1 tablespoon of vinegar.Keep it for 1/2 hour]
Maida- 1cup
Cornflour - 1/2 cup
Salt- to taste
Food colour - 2 pinch (red food colour)
Method
Make it into a paste by adding some water.
Mix the cauliflower into this and deep fry it.
